Baked Cod with Olives and Limes

Ingredients

  1. 4 (6-ounce) cod fillets, pin bones removed
  2. Salt and freshly ground black pepper
  3. 12 thin lime slices
  4. 1/4 cup pitted chopped kalamata olives
  5. 1/4 cup drained capers
  6. 2 teaspoons chopped fresh rosemary leaves
  7. 1/4 cup olive oil
  8. Lime wedges, for serving

Instructions

  1. Preheat the oven to 475 degrees F.
  2. Put the cod in an ovenproof baking dish and season with salt and pepper, to taste. Top each fillet with 3 lime slices, the olives, capers and rosemary. Drizzle with olive oil.
  3. Bake until the fish is cooked through, about 10 minutes. Remove the fish from the oven and serve with lime wedges.

This was the excellent. We made it with frozen king cod from Alaska. We made it as the recipe indicated except I had green olives instead of the olives it said in the recipe. We definitely have this in our rotation.

I made this dish using lemons, lemons zest, minced garlic, slice black olives (because that was all I had in my pantry), and McCormick Grill Mates Mojito Limes seasoning with all of the other ingredients that the recipe call for and My family and husband love this this dish.

Excellent! It was amazing how some of the olives and capers flavored the fish! This is the way to go and has replaced our old school recipe of crushed ritz crackers and melted butter!

Let me start by saying that I NEVER leave comments for recipes that I find online. They either become part of my rotation or they don’t. I’ve never felt the need to respond… until now. I have to leave a comment for this dish because it was SOOO good!! I used a little more olives than it called for and added some minced garlic and lime juice. I mixed the chopped olives, capers, fresh rosemary from our garden, garlic and lime juice together and topped the fish (and lime slices) before putting it in the oven. I also had 2 large cod fillets as opposed to 4 smaller ones. I cooked it for 15 mins and voilà – one of the best fish dishes I’ve ever had.
