Baked Gnocchi with Chicken

Ingredients

  1. 1 tablespoon extra-virgin olive oil
  2. 8 ounces white mushrooms, sliced (about 4 cups)
  3. Kosher salt and freshly ground pepper
  4. 2 tablespoons unsalted butter
  5. 2 tablespoons all-purpose flour
  6. 1 1/2 cups whole milk
  7. 1 cup low-sodium chicken broth
  8. 1/4 teaspoon freshly grated nutmeg
  9. 1/2 rotisserie chicken, skin removed, meat shredded (about 2 cups)
  10. 1 17.5-ounce package potato gnocchi
  11. 1 1/2 cups loosely packed baby spinach
  12. 1/4 cup grated parmesan cheese (about 1 ounce)

Instructions

  1. Position a rack in the upper third of the oven and preheat to 425 degrees F. Heat the olive oil in a deep ovenproof skillet over medium-high heat. Add the mushrooms, season with salt and pepper and cook, stirring occasionally, until lightly browned, about 4 minutes. Transfer to a plate and wipe out the skillet.
  2. Melt the butter in the skillet over medium heat; add the flour and cook, whisking, 3 minutes. Whisk in the milk and chicken broth until smooth; simmer, whisking constantly, until slightly thickened, about 5 minutes. Whisk in 1/2 teaspoon salt and the nutmeg.
  3. Add the chicken, mushrooms, gnocchi and spinach to the sauce and stir until coated and the spinach wilts. Sprinkle with the parmesan, transfer the skillet to the oven and bake until bubbling, about 20 minutes. Turn on the broiler; broil until lightly browned on top, about 3 more minutes.

I Add 3 garlic cloves, 1/2 c onion/shallot, 4 sprigs thyme or 1t dry, 4” rosemary. Do mix of milk/cream based on what I have. I Add spinach after baking/ reheating, about 1 c per serving. Do any mix of mushrooms, I prefer hen of the woods/shitake for more flavor. Rachel Ray put handful of porcini in broth, chopped, added Marsala, 1 c Parmesan, and juice of 1/2 lemon. Lemon juice adds freshness, also added fresh basil. My family loves this recipe! I just use shelf ready gnocchi. I also prep in advance earlier in day and just put in oven when ready to eat.

Yum! I cooked this dish as written, it didn’t need anything more. Some crusty bread and we were done!

This is a delicious comfort food dish that I can’t get enough of! I baked a couple of chicken breasts in lemon olive oil and italian spices rather than using a rotisserie chicken. The dish had a slight lemon flavor which put it over the top. Also, I used 1% milk and couldn’t tell the difference. I did add a shallot and garlic powder to the mushrooms as others had recommended. Delicious.

Delicious!!! I needed to use a rotisserie chicken before it went bad. This recipe was perfect. I used frozen gnocchi (uncooked) and frozen thawed spinach since that is what I had on hand. The only additions I made to this recipe was adding an onion (chopped) and a few cloves of garlic then At the end I threw in leftover roasted butternut squash and sweet potatoes . Turned out amazing. This is such a great versatile recipe. Thank you for sharing!

This was excellent, I followed others advice and added 1 small dice onion and 2 minced garlic. I wanted extra sauce since I had about 4 cups of chicken and was using g.f. gnocchi. I used 1 and 1/2 cups 1/2 n 1/2 and 1/2 cup milk increased homemade stock to 1 and 1/2 cups. Used 1/2 bag of spinach, made in cast iron fry pan. No need to broil at the end since the cheese brown on its own. Will definitely make again.

This was delicious and very easy to make. I only had 2 breasts so I cut the Gnocchi in half and only added one cup of milk with the stock. I like cheese so I added a little more Parmesan and some Provel. I like spinach so I might add more next time. Seasoning was perfect.

This was wonderful! Like a few others, I used a bit of minced garlic and onion in with the mushrooms. I also chopped a fresh garden tomato and tossed it in for a fresh little addition! Hubby loved it! So easy, even for a novice cook like myself!

Absolutely delicious!  This recipe reminds me of elegant chicken and dumplings!  I added a little bit of cornstarch slurry to thicken the sauce.
