Ingredients

  1. 1 pound dried pinto beans, picked through
  2. 1/2 pound bacon, chopped
  3. 1 onion, finely chopped
  4. 1 tablespoon chili powder
  5. 1 tablespoon Worcestershire sauce
  6. 4 cups low-sodium chicken broth
  7. Kosher salt
  8. 1 tablespoon apple cider vinegar
  9. 2 tablespoons chopped fresh chives (optional)

Instructions

  1. Put the beans in a large wide pot or Dutch oven and cover with cold water by 1 inch. Bring to a boil, then remove from the heat and let soak 30 minutes; drain and rinse.
  2. Return the beans to the pot and add the bacon, onion, chili powder, Worcestershire sauce, chicken broth and 4 cups water. Bring to a simmer over medium-high heat, then reduce the heat to medium and simmer 30 minutes.
  3. Add 1 teaspoon salt and reduce the heat to medium low. Cover and simmer, stirring occasionally, 1 1/2 more hours. Partially uncover the pot and continue simmering, stirring occasionally, until the beans are creamy and the liquid is thick, about 30 more minutes. Add the vinegar and chives and season with salt.

Very tasty and one of my favorite pinto bean recipes. But do not add salt until you add the vinegar (at the end). Adding salt the same time you are cooking the beans causes them to get tough.

Used onion soup mix packet instead of onion and salt, all water without broth, used 2 pounds of beans instead of 1, and added 3 chopped yellow potatoes. Delicious!

This recipe is great, works out great every time. The only charge I make is when you rinse and drain the beans, I use the same pan to sauté the bacon and onion before proceeding. Rendering the fat out is what everyone prefers in bacon.

I have made this recipe a few times and my whole family loves it. I make it just as written. I also took the advice of one reviewer and chop my bacon very small.

Wonderful. Addictive. Have it for breakfast even. Make sure your chilli powder is good and fresh, as it will make all the difference; I also cut out a cup of water because it thickened up nicer with a richer flavor that way without hurting the cooking of the beans.

These were very tasty, and were even better after an overnight mellowing in the fridge. The recipe does not call for sautéing the bacon before adding it to the beans, so I would advise chopping the bacon very finely so you do not end up with big hunks of fat in the final product.
