Ingredients

  1. 4 slices bacon, chopped
  2. 1/2 cup finely diced onions
  3. 2 cloves garlic, minced
  4. One 6-ounce can tomato paste
  5. 1 cup beef stock
  6. 1/2 cup loosely packed brown sugar
  7. 1/4 cup apple cider vinegar
  8. 1 teaspoon ground cumin
  9. 1/2 to 1 teaspoon cayenne pepper
  10. 1/2 teaspoon kosher salt
  11. 1/2 teaspoon freshly ground black pepper

Instructions

  1. In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
  2. Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
  3. Let cool to room temperature before using. This sauce is great on brisket or beef ribs.
