Ingredients
- 1 1/2 pounds russet potatoes
- 2 tablespoons unsalted butter, melted, plus more at room temperature, for serving
- 8 slices thick-cut bacon
- 1 red bell pepper, diced
- 1 small yellow onion, diced
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- Kosher salt and freshly ground black pepper
- 4 slices white bread, toasted
- 4 large eggs
- Chopped chives, for garnish
Instructions
- Prick the potatoes all over with a fork and brush them with 1 tablespoon of the melted butter. Put on a microwave-safe plate and microwave, flipping halfway, until fork-tender, 10 to 15 minutes. Set aside to cool slightly.
- Meanwhile, preheat the oven to 450 degrees F. When the potatoes are cool enough to handle, cut into bite-size pieces and set aside.
- Add the bacon to a sheet pan and bake until golden, about 15 minutes. Set the bacon aside on a paper towel-lined plate.
- Add the potatoes, bell peppers and onions to the sheet pan and toss to coat in the bacon fat. Sprinkle with the garlic powder, paprika, 2 teaspoons salt and 1 teaspoon pepper and toss again to coat with the spices. Spread out in a single layer and bake, tossing halfway through, until the onions and peppers are softened, about 20 minutes.
- Cut a 2-inch round from the center of each slice of toast; reserve the toast and rounds.
- Push the vegetables aside on the sheet pan to make a space in one corner and arrange the toast in 2 rows in the empty corner. Spread the vegetables evenly around the toast and add the bacon on top of the vegetables.
- Divide the remaining 1 tablespoon melted butter among the 4 holes in the toast and crack an egg into each. Place the 4 rounds around the toast. Bake until the eggs are set, 7 to 10 minutes. Top the eggs with chives and spread each toast round with butter.

This is delicious! My 6 year old son said to give it as many stars as possible. My husband isn’t a fan of over easy eggs, and says it’s good but not amazing. The flavors are wonderful and comforting. I loved the use of the cut out pieces of bread as a toast addition. We added pear butter as well as butter and it gave a nice sweet addition to the meal. I read a review saying that it was too salty but I found that it did require a lot of salt. Depending on the type of salt one has may change the amount of salt one uses due to the size of the grain of salt. Salt to desired taste. Fried potatoes like this will typically take 40 minutes on the stove but the microwave sped up the process. I used my Ninja Foodie air fryer oven to do this meal and it cut the oven time in half. I used the air fryer setting to cook the veggies but used the bake setting for the other steps. I prefer to use this method compared to the skillet because the food in easily finished together and I don’t have to worry about watching multiple skillets to keep the food from buring. Bacon also cooks the best in the oven. Even though this isn’t a one step sheet pan meal, it’s a great way to prepare the meal compared to traditional methods.
Great meal, everyone loved it! If you have the time to do the steps it’s simple. One thing is cooking the bacon…at 425degrees, 20 min was way too long to start, I recommend keeping a close eye on it while cooking at that temp (definitely don’t need 20min), or lower the temp, or maybe even use thick cut bacon. Other than the bacon it was tasty, easy, and fun to try.
This was not an easy breakfast! I wanted to try a sheet pan recipe, thinking it would be easier. Nope. You almost have to make everything separate. Not sure the point of it, could have cooked it quicker by itself. Also, way too salty. If it was less salty, it would have a higher rating. My son covered it in cheese and sour cream and said he would give it a 4 1/2. But I will not make again, sorry.

I’m sure this is yummy. Can’t go wrong with bacon, eggs and taters, BUT, I can make the same thing in 20-25 minutes with two skillets instead of an hour and 10 minutes. Just sayin…..
