Grilled Chicken BLT with Green Goddess Sauce

Ingredients

  1. 1/3 cup mayonnaise
  2. 1/4 cup finely chopped fresh chives
  3. 1/4 cup finely chopped fresh parsley
  4. 2 tablespoons chopped fresh tarragon
  5. 1 tablespoon capers, drained
  6. 1 anchovy fillet
  7. 1 clove garlic, minced
  8. 5 teaspoons fresh lemon juice
  9. Kosher salt and freshly ground pepper
  10. 1/3 cup sour cream
  11. 4 thin chicken cutlets (4 to 5 ounces each)
  12. Kosher salt and freshly ground pepper
  13. 2 tablespoons extra-virgin olive oil
  14. 4 hamburger buns, split
  15. Sliced tomatoes, cooked thick-cut bacon and Boston lettuce, for topping

Instructions

  1. Preheat a grill to medium high. Make the green goddess sauce: Combine the mayonnaise, chives, parsley, tarragon, capers, anchovy, garlic, lemon juice and a pinch each of salt and pepper in a small food processor. Puree until bright green and smooth. Transfer to a small bowl and stir in the sour cream. Season with salt and pepper. Thin with water if needed. Refrigerate until ready to use.
  2. Make the sandwiches: Season the chicken with salt and pepper and rub with the olive oil. Grill, flipping once, until well marked on both sides and cooked through, 6 to 8 minutes. Remove to a plate. Grill the buns until toasted.
  3. Serve the chicken on the buns with the green goddess sauce, tomatoes, bacon and lettuce.
