Crispy Garbanzo Beans

Ingredients

  1. Two 15-ounce cans garbanzo beans, drained and rinsed
  2. 4 strips bacon
  3. Salt
  4. 1 sprig fresh rosemary

Instructions

  1. Spread out the garbanzos on a baking sheet and let them dry, uncovered, in the refrigerator overnight. (If you forget to let them dry overnight, it’s okay; you’ll just need to cook them longer.)
  2. Place the bacon in a large skillet over medium-low heat and cook until browned and crispy, 4 to 5 minutes per side. Drain on a paper-towel-lined plate; reserve the fat in the pan. Eat the bacon as snack while you cook.
  3. Preheat the oven to 400 degrees F.
  4. Add the dried garbanzos to the pan with the rendered bacon fat. Season with a generous pinch of salt and add the rosemary. Cook over medium-low heat for about 2 minutes, then remove the rosemary sprig. Transfer the garbanzos to a baking sheet and bake until crispy, 35 to 40 minutes, stirring every 10 minutes. (If you did not dry the garbanzos overnight, bake them for 45 to 50 minutes.)
  5. Let cool to room temp before serving.

I used dry beans so I had to cook them first and then I did pat them dry and put them in the refrigerator overnight. You have to watch when you’re frying them because they burn easily.

The flavor was good, but mine were overcooked, nearly burnt. Next time, I’ll decrease the oven temp and cooking time.

Yum.  Simple and quick (I left off the overnight drying; just spent some time rolling them in paper towels to dry them) and very tasty…next time I might cook my own beans, and start from there, being sure not to overcook them.  But this is a great recipe!

These are delicious!!! I didn’t have fresh rosemary, so I emptied a tea bag and added a teaspoon of dried rosemary, tied it back up with the string. Used that as directed with the fresh and it infused the rendered bacon fat nicely. I can’t wait to share these with my family, if there’s any left!!
