Great flavor. Was a hit at our brunch. Be sure to line your plans with foil!
I like the idea of cooking bacon on a rack now. This will be my method of choice now. The bacon was tasty, however the texture was a bit gummy/chewy. I will work on it and see if maybe a thinner or different syrup might help. Also, I will use whole grain mustard next time instead of yellow mustard. But, overall good.
The flavor was great, but the drippings burned and made my kitchen very smoky. Next time, I will brush the maple syrup-mustard mixture for just the last few minutes.
I really like bacon fix this way. It taste great and very easy to fix. The bacon is not laying in the grease. Now is the only I bacon.
I even gave a copy of the recipe to a co-worker and she even liked it.
