Baked Apples and Bacon

Ingredients

  1. 12 strips applewood smoked bacon
  2. 4 to 6 sprigs fresh thyme, leaves only
  3. 3 medium Golden Delicious apples
  4. Extra-virgin olive oil
  5. 2 tablespoons superfine sugar
  6. Baby arugula

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Arrange the bacon on a sheet tray, sprinkle with some of the thyme and bake until crispy, about 12 to 15 minutes.
  3. Slice the apples horizontally to create 5 to 6 cross sections of the apple. On a separate sheet tray lined with a silpat or parchment paper lay the apples out in a single layer and drizzle with a little olive oil. Sprinkle a little sugar and thyme on each slice then bake in the oven until the apples begin to dehydrate and sugar has melted and caramelized, about 8 to 10 minutes
  4. To serve, lay the apple and bacon slices, alternating, in a long overlapping line on a serving platter. Or, break the bacon pieces in half and reassemble the apple slices back together, placing crispy bacon pieces in between each slice. Garnish with arugula and serve.

We found that we needed to cook the apples a little bit longer to get them to look like Tyler’s on the episode but it was very yummy. But, this recipe proved to my husband that pigs and apples do mix well. I have been trying to get him to eat pork and apple dishes and he wouldn’t even try them…but you switch out a cutlet with bacon and he’s all on it! LOL

Personally I have found if I’m having trouble saving a recipe/s it’s one of 2 problems.

1) Check to make sure it has not dropped your log-in/on. I’ve
had it happen even if I’m only saving 1 or 2 recipes.

2) If everyone else is saving recipes at the same time the recipe
box will lock up for a while. I can come back later and it will
save it just fine.

Hope you don’t have any more problems. I have noticed since upgrading to IE8 it drops my log-on a lot less also. TY for posting your note, it actually made me look at the recipe more and save it myself.
