Bacon wrapped potatoes are perfect to take to a potluck or gathering as an appetizer. They can be prepared in advance, then cooked at the venue, as they are easily transported.

Ingredients

  1. 16 baby red potatoes
  2. 8 pieces thick-cut bacon, halved
  3. 3 teaspoons barbecue seasoning
  4. 1 tablespoon chopped fresh parsley
  5. 2/3 cup store-bought ranch or blue cheese dressing

Instructions

  1. Preheat the oven to 400 degrees F, ensuring that a rack is placed in the upper third of the oven. Line a baking tray with foil.
  2. Wrap each potato in half a piece of bacon. Use toothpicks to secure the bacon.
  3. Sprinkle with the barbecue seasoning, then bake until crisp, 18 to 20 minutes.
  4. Garnish with the parsley and serve with the dressing on the side.

Not remotely done, we had to cook them at 400° for just under an hour! And that was with halving the baby potatoes, so not a clue how anyone is serving them in 20 min. Absolutely delicious but definitely plan for them to take much longer!

These were so fun to make! We used baby red-skinned potatoes. Took more like 30 minutes to crisp but we also have a cheap oven. Taste great with Chick-Fila Sauce!
