Ingredients

  1. 2 ripe avocados, diced
  2. Juice of 1 to 2 limes, plus more if needed
  3. 1/4 cup finely diced red onion
  4. 1 clove garlic, smashed and finely chopped
  5. 1 plum tomato, seeds removed, finely diced
  6. 3 tablespoons fresh cilantro, finely chopped
  7. 2 teaspoons sambal oelek
  8. Kosher salt
  9. Tortilla chips, for serving

Instructions

  1. Mix the avocados, lime juice, red onion, garlic, tomato, cilantro and sambal oelek in a bowl, lightly mashing.
  2. Taste for seasoning and adjust with salt and additional lime juice, if needed. Serve with tortilla chips.
