Ingredients
- 1 sweet potato, skin left on, sliced lengthwise into 1/4- to 1/8-inch-thick slices
- Olive oil, for drizzling
- Kosher salt and freshly ground black pepper
- 2 avocados, diced
- 1 tablespoon minced onion
- 1 clove garlic, minced
- Juice of 1 lime
- 2 teaspoons chopped fresh cilantro
- 2 to 3 Roma tomatoes, chopped
Instructions
- Prepare a grill for cooking over medium-high heat. Coat both sides of the potato slices with olive oil and sprinkle with salt and pepper.
- Cook the potato slices on the grill until they have grill marks and are tender all the way through, 4 to 6 minutes per side.
- Meanwhile, combine the avocados, onion, garlic, lime juice and 1 teaspoon cilantro in a bowl and mash until thoroughly blended. Season the guacamole with salt and pepper.
- In another bowl, combine the tomatoes, 1 teaspoon cilantro and salt and pepper to taste.
- Top the potato slices with the guacamole and tomatoes and enjoy!
