Asian Chicken Noodle Salad

Ingredients

  1. One 16-ounce package rice noodles
  2. 1/3 cup minced fresh cilantro
  3. 1/3 cup minced fresh mint
  4. 3 tablespoons chopped salted peanuts
  5. 4 scallions, thinly sliced
  6. 2 breasts rotisserie chicken, cut into cubes
  7. 2 medium carrots, cut into ribbons
  8. 1/2 English cucumber, diced
  9. 1/4 cup plus 2 tablespoons soy sauce
  10. 3 tablespoons fish sauce
  11. 3 tablespoons honey
  12. 3 tablespoons rice vinegar
  13. 2 tablespoons lime juice
  14. 1 tablespoon grated fresh ginger
  15. 2 teaspoons sesame oil
  16. 2 cloves garlic, grated
  17. 1 jalapeno, minced

Instructions

  1. For the salad: Cook the noodles according to the package directions. Drain and rinse with cold water until cool, then drain again thoroughly.
  2. Mix the cilantro, mint, peanuts, scallions, chicken, carrots and cucumber with the noodles in a large bowl.  
  3. For the sauce: Whisk together the soy sauce, fish sauce, honey, vinegar, lime juice, ginger, oil, garlic and jalapeno in a medium bowl.
  4. Toss the salad with the sauce. Serve immediately or refrigerate until ready to serve.

Made this recipe while camping. Great sauce but too many rice noodles for my taste. I also added some cabbage, sliced almonds, water chestnuts and bean sprouts. Fun base to mix it up on.

Everyone loved this at our picnic! I added some fresh cubed mango topped with more chopped peanuts on top of the salad! Yummy!

We very much enjoyed the flavors but found it is not good leftover.  The acid in the dressing broke down the chicken and gave it an unpleasant texture.  The noodles and vegetables were fantastic leftover.

I didn’t quite double the sauce but pretty close. Feel like this is a recipe where you can play with the ingredients to adjust for your taste. Drizzled with Sriatcha at the end. Very, very good. Easy tasty summer meal. Good way to use left over chicken.
