Spring Rolls with Asian Chili-Lime Dipping Sauce

Ingredients

  1. Rice paper
  2. Bowl of warm water
  3. Sprouts
  4. Julienned carrots
  5. Julienned Napa cabbage
  6. Julienned red peppers
  7. Asian chili-lime dipping sauce, recipe follows
  8. 4 tablespoons cup lime juice
  9. 4 tablespoons rice vinegar
  10. 4 tablespoons water
  11. 2 tablespoons sugar
  12. 1 teaspoon red chilies
  13. 1 scallion, finely chopped
  14. 1 teaspoon sesame oil

Instructions

  1. Dip rice paper into warm water to soften. Lay out on a damp towel. Arrange a few sprouts, carrots, cabbage, red peppers on the lower bottom of the rice paper. Fold right and left sides over filling and roll up tightly. Place seam side down on serving platter.
  2. In a bowl combine all of the ingredients. Let stand at room temperature before serving or store in the refrigerator.

The sauce was awful. Overly bitter and not tasty at all.

Absolutely delicious and a hit with all of my guests. Everyone loved the sauce. I alternated some of my rolls with jicama and cucumbers. The taste was refreshing and delicious. I recommend this highly.
