Scallion and Egg Pancakes

Ingredients

  1. 2 tablespoons honey
  2. 1 tablespoon white wine or cider vinegar, eyeball it
  3. 1 teaspoon sesame oil
  4. 1/4 cup tamari dark soy sauce
  5. 1/8 cup water, eyeball it
  6. 1 tablespoon light oil, plus some to drizzle
  7. 4 scallions cut into 1-inch lengths
  8. 2 eggs plus 2 egg yolks, beaten
  9. Salt
  10. 4 large plain flour tortillas

Instructions

  1. Mix honey with vinegar, sesame oil, and tamari, then stir in water and transfer to a small serving dish.
  2. Heat a large nonstick skillet over high heat with 1 tablespoon oil. When the oil smokes, add scallions and sear them, crisping them at edges and charring the greens, 2 minutes. Pull pan from heat and add egg mixture seasoned with salt. Toss and scramble the eggs, putting the pan back over the heat briefly if necessary, then remove eggs to a plate. Wipe pan clean and add a drizzle of oil to skillet and a tortilla. Blister the tortilla, 30 seconds, turn it and add 1/4 of the scallions and eggs to top the tortilla. Fold the tortilla into quarters and crisp the outsides then remove, repeat with remaining ingredients then serve with sauce for dipping.

This recipe for the egg and scallion pancakes is actually very good. It is very easy to make and has great flavor.

The dipping sauce is another story. It is horrible. All around our dinner table it was unanimous as we took our first bites that the sauce ruined our first bite. Actually the pancake is so good as sauce isn’t necessary.

OMG, these were sooooo good! I just loved munching on them along with the soup. I didn’t like the dipping sauce although, I’ll admit, I probably didn’t make it right and I think my honey is a bit .. old.

Will totally make these again.

I had all the ingredients on-hand, and prepping the scallions, mixing the sauce, and whisking the egg/egg yolk together took NO time at all. It was a very good (and simple) lunch. However, after the first pancake, I added some hot sauce and a little more soy sauce. I wanted a little more zip, but I can’t really fault the original recipe – it’s very good as-is.
