Ingredients

  1. 12 shot glasses
  2. 1/2 English cucumber, peeled and fine brunoise
  3. 1 dozen kumamotos, shucked, save liquor in the shell
  4. 12 tablespoons top quality, chilled sake
  5. 1 lemon, zested

Instructions

  1. Fill each shot glass with 1/2 tablespoon cucumber. Top with oyster and its liquor. Top that with 1 tablespoon chilled sake and garnish with zest. Serve in a bed of crushed ice.
