Ingredients

  1. 1 head Napa cabbage, shredded
  2. 1 head red cabbage, shredded
  3. 1 large cucumber, julienned
  4. One 10-ounce bag shelled edamame, cooked
  5. 2 carrots, peeled and grated
  6. 2 green onions, finely sliced
  7. 2 cups olive oil
  8. 1 1/2 cups finely chopped fresh cilantro
  9. 1 cup sugar
  10. 2 cloves garlic, minced
  11. Juice of 2 limes
  12. 1/2 teaspoon salt
  13. 1/2 teaspoon pepper
  14. 1 avocado, peeled and finely sliced

Instructions

  1. For the Thai salad: In a large serving bowl, toss the cabbages, cucumber, edamame, carrots and green onions.
  2. For the sweet lime-cilantro dressing: Put the oil, cilantro, sugar, garlic, lime juice, salt and pepper in a large blender and blend until smooth.
  3. Top each serving of salad with 2 tablespoons of the sweet lime-cilantro dressing and 2 slices of avocado for garnish.

I loved this salad I made a few adjustments due to availability.  I used Savoy cabbage and sweet peas.  I also added jicima.  I changed the sugar to agave syrup and I used 3 limes and the zest from 1 lime.  The only thing that went wrong was I didn’t check my cilantro first and it was extremely bitter.

Your better off going to YouTube to find how to cook Thai beef salad the correct way.

As always, I am glad I read through the comments first before eating this. The salad components were easily adjusted, and I added fresh mushrooms and zucchini to the pile. The dressing took awhile to perfect. I mostly got it to a better place. I added lime zest, and I bumped it up to 4 limes. I cut it to 1 cup of canola oil (I’m not fond of EVOO) and that was still too much. Replaced sugar with honey, since the first batch was too grainy. Added a tablespoon each of rice wine vinegar and soy sauce, and a couple pinches of red pepper flakes. Finally, I added Sesame oil, around a quarter teaspoon, as we all know a little goes a long way. It was good, but I’m annoyed FN has very little quality control on their website. Viewers work hard to give you feedback, get on the ball and correct this stuff. Thanks!

We had this salad for dinner this weekend. It tasted “OK.” But flavor wasn’t the most significant concern I had about the recipe. First, the amount of cabbage called for is out of proportion with the rest of the ingredients. There was SOOOO much cabbage! Comments that suggest using half or 2/3 of the cabbage called for, seem a great adjustment. I also think the proportions in the dressing are off. As directed, you’ll end up with a greasy, sweet dressing that has very little depth of flavor. The cilantro and lime flavors don’t come through. I think the comments that suggest more lime (maybe even with a bit of zest) and cilantro and less sugar and oil also make sense. I also have to say that I agree with the criticism about the name of the salad. If you googled for a traditional Thai salad recipe, you’d see that there are a lot of important ingredients and flavors missing here.
