Traditional Mandarin Fried Rice

Ingredients

  1. Canola oil
  2. 3 eggs
  3. 2 tablespoons minced garlic
  4. 2 tablespoons minced ginger
  5. 1 bunch chopped scallions, green and white separated
  6. 1 lapchang, diced (Chinese sausage), can substitute with 4 strips of cooked bacon
  7. 8 cups cooked, day old long grain rice
  8. 3 tablespoons thin soy sauce
  9. 1/2 teaspoon white pepper
  10. Salt to taste

Instructions

  1. In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs. Remove the eggs. In the same wok, coat with oil and stir-fry garlic and ginger. Add white scallions and lapchang. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately.

This is exactly how I’ve made my fried rice for over 30 years. I always add cooked, chopped shrimp to it. The bacon is a very acceptable substitute for the Chinese sausages!

This was one of the best fried rice recipes I’ve made. My son snarfed it down! I didn’t have the sausage that was mentioned, so I cut up chicken breast. Then I marinated the chicken in some soy sauce with some of the garlic and ginger. Cooked chicken first and then followed the recipe. It’s a keeper! Thanks Ming!

This is how fried rice is done. This recipe is close to my Chinese grandfather’s, except that this is the basic fried rice. Add vegetables, spices, or anything else to taste to make this recipe your own.
