Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1/2 pound sugar snap peas
- 1/2 cup shredded carrots
- 1 cooked turkey tenderloin, cubed (about 2 to 3 cups)
- 3/4 cup reduced-sodium chicken broth
- 1/4 cup rice vinegar (regular or seasoned)
- 2 tablespoons sugar
- 2 tablespoons reduced-sodium soy sauce
- 1 teaspoon crushed red pepper or crushed hot chili flakes
- 1 cup regular rice, cooked according to package directions
- 2 tablespoons freshly chopped basil leaves
- Salt and freshly ground black pepper
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and garlic and cook 3 minutes, until soft. Add snap peas and carrots and cook 2 minutes. Add turkey and cook 1 minute, until golden brown on all sides.
- In a medium bowl, whisk together broth, vinegar, sugar, soy sauce, and pepper flakes. Add mixture to pan and bring to a simmer. Add rice and stir to combine. Remove from heat and stir in basil. Season, to taste, with salt and black pepper.

I was very pleased with how this came out. I used canned turkey instead of the tenderloin, but otherwise followed the recipe to the tee. My husband had seconds! Very tasty and not too spicy.

Anyway. I made this dish tonight and I quite liked it; my g/f seemed less enthusiastic but I should add that I was hungry when we started dinner, she wasn’t, AND we had an elaborate first course.
The meal was easy to prepare (took me way longer than the advertised 25 minutes, though!), and I followed the recipe to a T.
It came out well; I recommend the recipe to fellow c00kin’ n00bs.

I had to substitute the following because of what I had on hand:
Ground turkey for tenderloin – I cooked the ground turkey in a pan as one big patty, seasoned with salt, pepper, and garlic powder.
Chicken stock for chicken broth.
Balsamic vinegar for rice vinegar.
Dried basil for fresh basil – I added a few dashes while simmering.
Had to omit sugar snaps, did not have any.

My fiancee and I were looking for something new to do with a turkey tenderloin and this was PERFECT! We left out the peas (because we don’t like them and the basil (because we didn’t have any and it turned out awesome. The only change I felt needed to be made was to either add a little more rice, or use the rice separately. He was SO impressed, he rated it a 12/10!

The combination of flavors was decent but…It was way too spicy and I usually love spicy food! I think perhaps part of the problem is the container of red pepper I used had a lot of seeds vs flakes. I threw away the leftovers and deleted the recipe from my recipe box on FN.com. It just wasn’t good enough to try again with less pepper.
Had some fresh sugar snap peas that needed to be used. I found this recipe and decided to give it a try. I didn’t have turkey so I thawed one chicken breast, sliced it thin, seasoned it with salt and pepper and sauteed it in a little olive oil before I started the onion. The small amount of browned bits added flavor to the dish. All in all, it was a very tasty and fast weeknight dish.
I’m Thai and newly move to States. I watched the show this morning. Thai don’t cook your way! Should you call it Thai? Really?
this is a tasty staple for when you are looking for something to cook and you need to do some grocery shopping. i used chicken breast and frozen peas instead of the turkey and sugar snap peas. i also usually double the veggies in any recipe. there was plenty of sauce for this recipe. the only thing i would do different is add more thai basil because there is only a hint of flavor. super yummo.
