Thai Meatballs

Ingredients

  1. 1 pound ground pork
  2. 1 pound peeled and deveined shrimp, ground or chopped finely
  3. 2 tablespoons minced lemongrass
  4. 2 tablespoons sesame seeds
  5. 1 lime, juiced
  6. 2 Thai chiles, minced
  7. 2 tablespoons minced ginger
  8. 2 cloves garlic, minced
  9. 3/4 cup fresh Thai basil leaves, chopped
  10. 3/4 cup fresh cilantro leaves, chopped
  11. 1/2 cup fresh mint leaves, chopped
  12. 2 tablespoons soy sauce
  13. 1/4 cup fish sauce
  14. 1/2 cup breadcrumbs
  15. 2 eggs
  16. Olive oil
  17. Carrot shavings, for garnish
  18. Chopped roasted peanuts, for garnish
  19. Peanut Dipping Sauce, recipe follows
  20. 1 cup chunky peanut butter
  21. 1/2 teaspoon grated ginger
  22. 2 teaspoons sesame oil
  23. 2 teaspoons soy sauce
  24. 1/4 cup hot water
  25. 2 tablespoons rice wine vinegar
  26. 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Combine the pork, shrimp, lemongrass, sesame seeds, lime juice, chiles, ginger, garlic, basil, cilantro, mint, soy sauce, fish sauce, breadcrumbs and eggs in a large mixing bowl and mix by hand until thoroughly incorporated. Drizzle the olive oil into a 9 by 12-inch baking dish, making sure to evenly coat the entire surface.
  3. Roll the mixture into round, golf ball size meatballs, making sure to pack the meat firmly.
  4. Place the balls into the oiled baking dish such that all the meatballs are lined up evenly in rows and are touching each of their 4 neighbors in a grid.
  5. Roast until firm and cooked through, about 20 minutes. Allow the meatballs to cool about 5 minutes before removing from the baking dish.
  6. Garnish with shaved carrots and chopped roasted peanuts. Serve with Peanut Dipping Sauce.

Yummy meatballs, tastes like ShuiMai without the wrappers. Very easy, goes great with Big Daddys ginger wings. These will be served at a baby shower. Sadly no Thai (or sweet basil available at the store this week. Not a fan of cilantro so that was omitted as well. Peanut sauce using natural peanut butter had a weird consistancy, but I am going with user error as I did not measure accurately, but taste was awesome! Thanks meatball guys. Coworkers enjoyed them too!
