Thai Coco Cocktail

Ingredients

  1. 2 1/2 ounces coconut rum
  2. 1 1/2 ounces Fresh Lemongrass Syrup, recipe follows
  3. 1 ounce freshly squeezed lime juice (about 1 juicy lime)
  4. Very thin slice lime or spear of fresh lemongrass, for garnish
  5. 2 stalks fresh lemongrass, coarsely chopped
  6. 2 cups water
  7. 1 cup sugar

Instructions

  1. Fill a cocktail shaker or small pitcher with ice. Add the rum, lemongrass syrup, and lime juice. Cover and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Strain into a chilled cocktail glass. Garnish with lime on the rim or the lemongrass spear in the drink. Serve.
  2. Place the lemongrass, water, and sugar into a saucepan and bring to a boil. Reduce heat, and simmer, partially covered, for 15 minutes. Strain the mixture and cool. Cover and refrigerate for up to a week.
  3. Yield: 2 cups

I tried this lovely cocktail for a thai dinner party I was attending and thought it excellent as is, following the recipe exactly. I also trialed a basil-lime daiquiri from another site and was disappointed, but used its idea of a couple of muddled thai basil leaves as an addition to this recipe and thought it slightly improved. Also good with a salt rim if you like that sort of thing!

Some friends and I were going out for Thai and I had everyone over for cocktails before..and of course…I had to find a Thai Inspired cocktail at the last minute.
I saw this recipe and ran to the store to get the lemongrass. Well, it was worth the run..this is yummy! I cut back the rum by 1/2 ounce and added Lime Flavored Vodka and a little less of the syrup (I don’t like sweet drinks) and it was amazing.
