Korean BBQ Short Rib Sandwich

Ingredients

  1. 2 pounds Kalbi (marinated short ribs), recipe follows
  2. 1 cup Kimchee, recipe follows
  3. 1 cup Pickled Red Peppers, recipe follows
  4. 4 hoagie rolls
  5. 8 tablespoons Spicy Aioli, recipe follows
  6. Serving suggestions: hand-cut fries, potato chips or a salad
  7. 2 pounds beef short ribs, sliced 1/4-inch thick
  8. 2 cups soy sauce
  9. 1 cup sugar
  10. 1/4 cup sambal (Asian chili paste)
  11. 2 tablespoons lime juice
  12. 1 1/2 tablespoons sesame oil
  13. 7 grams ginger, peeled and minced
  14. 4 cloves garlic, minced
  15. 2 scallions, thinly sliced
  16. 1/2 head napa cabbage, cut into 1/2-inch pieces
  17. Kosher salt
  18. 1 cup tamari
  19. 7 grams ginger, minced
  20. 1/2 teaspoon fish sauce
  21. 1/2 teaspoon sambal (Asian chili paste)
  22. 1/2 teaspoon sugar
  23. 2 scallions, thinly sliced
  24. 1 small carrot, grated
  25. 1 clove garlic, minced
  26. 2 red bell peppers, sliced into 1/4-inch strips
  27. 1/4 teaspoon red pepper flakes
  28. 1/8 teaspoon ground cinnamon
  29. 1/8 teaspoon ground nutmeg
  30. 1 clove
  31. 1 pod star anise
  32. 1 cup rice vinegar
  33. 1/2 cup sugar
  34. 1/4 cup mayonnaise
  35. 2 teaspoons Sriracha

Instructions

  1. Preheat a flat-top or griddle to 350 degrees F.
  2. Place the Kalbi on the flat-top and cook until tender and fully cooked, 2 1/2 minutes per side. Let rest for 1 minute.
  3. Meanwhile, place 1/4 cup Kimchee and 1/4 cup Pickled Red Peppers on each hoagie roll.
  4. Cut the short ribs into 1 1/2-inch pieces and place over the Kimchee and Pickled Red Peppers. Spread 2 tablespoons of Spicy Aioli over each roll. Serve with hand-cut fries, potato chips or a salad.
  5. Place the short ribs in a lidded container. Whisk together the soy sauce, sugar, sambal, lime juice, sesame oil, ginger, garlic, scallions and 3/4 cup water in a large mixing bowl. Pour over the short ribs, cover and marinate in the refrigerator for 6 to 8 hours.
  6. Place the cabbage in a nonreactive lidded container.
  7. Heat 1 tablespoon salt and 2 cups water in a small saucepan, stirring until the salt dissolves. Pour over the cabbage and let sit for 3 hours at room temperature.
  8. Rinse and drain the cabbage in a medium colander, pressing out any additional liquid. Transfer the cabbage back to the container and add the tamari, ginger, fish sauce, sambal, sugar, scallions, carrots and garlic; mix well.
  9. Cover the container with plastic wrap and then the lid. Let ferment for 5 days at room temperature, then transfer to the refrigerator for up to 8 days.
  10. Place the peppers in a nonreactive lidded container.
  11. Combine the red pepper flakes, cinnamon, nutmeg, clove and star anise in a sachet and place in medium saucepan. Add the vinegar and sugar, and bring to a simmer, stirring occasionally. Remove from the heat and pour the liquid and sachet over the peppers. Let cool to room temperature, then remove the sachet. Cover the container and refrigerate for up to 8 days.
  12. Whisk together the mayonnaise and Sriracha in a small bowl. Refrigerate until ready to use.

Korean BBQ does not use sambal,
The kimchi directions are far from how it’s made.

This would go over much better if you called it Asian fusion steak sandwich.

Respect the culture’s foods without bastardizing it. Idea is good, title is a bit misleading but if someone has never had Korean food, you could convince them that this is s Korean BBQ sandwich.

Just and honest review not trying to be mean but others my even consider this “cultural appropriation” but I’m but that extreme
