Ingredients

  1. 1/4 cup fresh lime juice
  2. 2 tablespoons fish sauce
  3. 2 teaspoons light brown sugar
  4. 2 tablespoons toasted rice powder, store-bought or homemade
  5. 2 teaspoons roasted chile powder or red chile flakes
  6. 4 cups sliced boneless fried chicken breast or tenders (1/2-inch-thick slices), warm or at room temperature
  7. 4 scallions, thinly sliced (about 1/4 cup)
  8. 1/2 red onion, halved and thinly sliced (about 1/2 cup)
  9. 1/4 cup packed fresh cilantro leaves
  10. 1/4 cup torn fresh mint leaves

Instructions

  1. For the dressing: In a small bowl, whisk together the lime juice, fish sauce, brown sugar, rice powder and chile powder until combined. Set aside.
  2. For the larb: In a large bowl, combine the chicken, scallions, onion, cilantro and mint, then slowly pour the dressing over the top while tossing. Mix gently but thoroughly. Taste and adjust any seasonings as needed. The larb should be tangy, salty and a little spicy (like me).

I can’t wait to try all the recipes from this episode!  I really enjoy Mrs. Thigen.  She obviously knows her way around the kitchen.  I’m looking forward to seei what she cooks.  It has to pass the standards of her Cali family.  Kids can be the toughest critics!  And they gobbled this food up!   I would like to cook more Thai influenced cuisine for my family.  .

SO good!!! Unexpected mix of traditional Thai seasoning with delicious flavor and texture of fried chicken strips. Really good, really easy.
