Chinese Cheesecake

Ingredients

  1. Canola oil, for frying
  2. 8 tablespoons cream cheese
  3. 3 tablespoons ricotta cheese
  4. 2 1/2 tablespoons powdered sugar (1 1/2 for mix, 1 tablespoon for garnish)
  5. 1 egg
  6. 3 tablespoons milk
  7. 10 thick egg roll skins
  8. 1 cup raspberries, fresh preferred
  9. 1 tablespoon ground cinnamon

Instructions

  1. Heat 1-inch of canola oil in large saute pan, to 325 degrees F.
  2. In a bowl mix the cream cheese, ricotta, and 1 1/2 tablespoons sugar with a whip, until thoroughly blended.
  3. Beat egg and milk together. Place 1 1/2 tablespoons of cheese mix in center back of egg roll skin and place 4 to 6 raspberries in the center of cheese mixture.
  4. Brush egg wash around edges of skin, fold left and right sides of skin in 1/2-inch, and then roll from back to front, insuring that the roll is sealed.
  5. Place in oil and cook both sides until golden brown. Let drain on paper towels for 2 to 3 minutes.
  6. Dust with cinnamon and sugar. Serve with whipped cream and raspberries, if desired.

Deep-Fried Blintzes in Egg Roll Wrappers is more accurate, but I guess Chinese Cheesecake is flashier. Once I get raspberries, wrappers, white chocolate chips, and Bonne Maman Intense Raspberry Jam (everything else is already in my fridge), it’s a done deal! I’m serving them with White Chocolate Cream (just melt the chips and fold into unsweetened whipped cream) swirled with Raspberry Jam — on the side. I would NEVER put cold whipped cream on top of hot fried anything!

Once I saw this recipe I had to try it. So I decided to make these for a dinner party. I followed the recipe exactly and the Chinese cheesecakes ended up being a big hit @ the dinner.

After making my first batch I wanted to get experimental. So I also used Beyers mixed berry ice cream topping in place of the raspberries. These came out better than the originals. I also tried using bananas in place of the raspberries and these were also amazing.

Lastly I did a take on fried peanut butter and jelly. Not using the creme cheese mixture. These were my least favorite, the peanut butter was overpowering and the jelly too sweet.

Overall I love this recipe and it’s versatility. I look forward to making these again soon. I’m thinking I may attempt a sweet potato pie version. Yum!!!

My husband & I made these together the other night for dessert. We made half with raspberries & the other half without. I liked both. But we really enjoyed without the berries. I also tried some dunking one in strawberries with sauce that I liked better then the raspberries. To each his own. All & all they were YUMMY. We will be making these again real soon!!!!! Great easy recipe to have kids help with.

I left the berries out as well and made it for my roommates. I could only find thin egg roll wrappers so I got those and just doubled up. It turned out to be perfectly crispy! I will definitely make this again. :

WOW, I saw this recipe and knew I had to try it! I’ve never made egg rolls before (kinda scared of the process, I guess). I made theese for Super Bowl Sunday and they were the HIT of the party!! I went to the market, but the berries didn’t really look nice and fresh, but I knew I had bananas at home. I essentially made bananas foster for the filling. Melted butter in a skillet, added brown sugar and sliced bananas. Made the cream cheese filling as per Guy’s recipe. topped it with the bananas foster, rolled and fried. I added a bit of the glaze from the bananas to the whipped cream. It was amazing, Guy! Thanks for the incentive! My 15 year old son and I spent the rest of the day trying to figure out what else we can put in egg roll wrappers and cook up!
