Chicken Lettuce Cups

Ingredients

  1. 1 tablespoon oil
  2. 1 small carrots, diced
  3. 1/2 celery rib, diced
  4. 1/2 red bell pepper, diced
  5. 5 snap peas, diced
  6. 1/2 cup diced red onion
  7. 1/2 cup mung beans, cut in 1/2
  8. 2 chicken breast, diced
  9. 6 ounces Apricot Sesame Sambal Szechwan Sauce, recipe follows
  10. 5 fried wonton skins
  11. 6 iceberg lettuce leaves
  12. 2 tablespoons diced green onions
  13. 2 tablespoons crushed, unsalted peanuts
  14. Black sesame seeds, for garnish
  15. 1/2 cup soy sauce
  16. 3 tablespoons minced garlic
  17. 3 tablespoons minced ginger
  18. 3 tablespoons sambal hot sauce
  19. 3 tablespoons apricot preserves
  20. 1/4 cup rice wine vinegar
  21. 3 tablespoons hoisin sauce
  22. 1 teaspoon minced cilantro
  23. 2 teaspoons sesame seeds
  24. 1 teaspoon sesame oil

Instructions

  1. In a medium saute pan over high heat, add oil. Add vegetables, and chicken, saute for 45 seconds. Deglaze with sambal sauce for 30 seconds.
  2. Add wonton to lettuce cup, pour chicken and veg mix into cup, top with green onions and peanuts. Garnish lettuce cups with black sesame seeds.
  3. Mix all ingredients thoroughly. Shake before serving.

This recipe has been my favorite for years! The flavors work so well together, and it also goes great with rice.
