Ingredients

  1. Vegetable oil
  2. 3 ounces ground pork
  3. 1 teaspoon minced garlic
  4. 6 ounces shredded or thinly cut cabbage
  5. 3 ounces shredded or thinly cut carrots
  6. 5 ounces rehydrated thin mung bean noodles
  7. 1/3 cup premium soy sauce
  8. 1 tablespoon minced green onions
  9. 1 tablespoon sugar, brown or white
  10. 1/2 teaspoon minced skinless ginger
  11. 1/2 teaspoon ground white pepper

Instructions

  1. Heat a pan with some oil over medium heat. Add the pork and garlic to the pan and cook until the flavor permeates and the pork browns. Then turn the heat to medium-high, add the cabbage and carrots, and stir-fry until the vegetables soften. Next, add the noodles, soy sauce, onions, sugar, ginger and pepper, and continue to stir-fry until all of the ingredients are mixed and the entire dish is coated with soy sauce. You will know when it is done is when the whole dish is steaming hot, light brown and the noodles are transparent with a shiny glaze.
  2. To assemble, use cooking tongs to hold and twist the stir-fry and transfer on to a platter.

Great dish. Adjusted ingredient portion for larger quantity. Turned out wonderfully.

This is an excellent yet simple recipe to get started out in Asian cooking that packs quite a bit of flavor for such an easy dish. I’ve made this over a dozen times now and it always seems to please everyone.
My family prefers Tamari instead of soy sauce and sometimes I’ll add a splash of fish sauce as well but otherwise I usually just follow the recipe. Also for those that don’t eat pork just use ground turkey (preferably thigh or leg) as it works just fine
