Spinach Artichoke Calzones

Ingredients

  1. Nonstick cooking spray, for the baking sheet and plastic wrap
  2. 12 frozen unbaked dinner rolls
  3. One 10-ounce box frozen chopped spinach, thawed
  4. 1 cup chopped drained canned artichoke quarters
  5. 1 cup shredded low-moisture mozzarella
  6. 1 cup whole-milk ricotta
  7. 1/4 cup grated Parmesan
  8. 1/4 cup heavy cream
  9. Freshly ground black pepper
  10. All-purpose flour, for dusting
  11. Warm marinara sauce, for dipping
  12. Serving suggestion: salad

Instructions

  1. Coat a baking sheet and some plastic wrap with the cooking spray. Place the rolls on the baking sheet and cover with the plastic wrap. Let thaw and rise for 2 to 3 hours.
  2. Meanwhile, make the filling: Place the spinach in a kitchen towel and wring dry. Put in a large bowl, separating any clumps. Add the artichokes, mozzarella, ricotta, Parmesan and heavy cream and stir until combined. Season with pepper.
  3. Preheat the oven to 400 degrees F.
  4. Roll out each dinner roll on a lightly floured surface into a 5-inch round. Spoon 1/4 cup of the filling on half of each dough round. Dampen the edges of the rounds with water, then fold the dough over the filling to enclose, pressing the edges to seal.
  5. Arrange the calzones on 2 baking sheets lined with parchment paper. Bake until golden brown, 10 to 13 minutes.
  6. Serve the calzones with the warmed marinara sauce for dipping, and a salad.

Very Good! I actually used marinated artichokes. I used one 12 ounce jar. By the time I drained and chopped them up it added up to approximately 1 cup. Just added a little more flavor. I do the same when making spinach artichoke dip.

Made these tonight. Good, but something is missing. Can’t put my finger on it. Maybe sour cream, mayo just not sure. Husband and I both feeling the same way. I did add a pinch of garlic powder. Dipping in marinara helped.

I would use pizza dough. It was rather dry and I used the mozzarella balls. I also added some chicken. More cheese needed. Also should have added garlic, oregano, and basil. In addition brush with garlic butter. Recipe as is is lacking. Needs major tweaking. Wanted to like it but sorry.

I liked the filling, but the bread rolls weren’t the right dough in my opinion. An oily pizza dough or even a pie crust would be better, I think.

I added chili flakes, a grated clove of garlic and extra Romano cheese to the mixture. Brushed melted butter with salt and garlic powder in the tops after baking. All my friends loved it. Really delicious. I also made my own bread dough, and weighed out each ball of dough at 1.1 oz. which was perfect.

A great, easy and tasty recipe. This would be perfect to freeze for a quick lunch and also a fun appetizer for a party.
