Sweet Potato, Bacon and Apple Hash

Ingredients

  1. 2 garnet yams, peeled and cut into 1/2-inch dice
  2. Extra-virgin olive oil
  3. Kosher salt
  4. 4 to 6 slices thick cut bacon, cut into lardons
  5. 1 large onion, cut in 1/2-inch dice
  6. 2 Granny Smith apples, cored and cut into 1/2-inch dice
  7. 4 scallions, white and green parts separated and thinly sliced
  8. 1/2 cup green pumpkin seeds (pepitas), toasted

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, add the sweet potatoes, drizzle with olive oil and sprinkle with salt, to taste. Toss to coat and arrange them on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from the oven and reserve.
  3. Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the sweet potatoes, and saute until the sweet potatoes are cooked through and starting to become crispy, about 7 to 8 minutes.
  4. Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.
  5. Fantastico!

I’ve never been a big sweet potato fan, but my grandson is allergic to white potatoes so we’re always looking for yummy sweet potato recipes that everyone can enjoy. This hit the spot. I’m thinking it’s also a great option for a Thanksgiving side. There are so many flavors in this with the onions, bacon, apples and sweet potatoes. Adding the pumpkin seeds at the end is also a great addition.

Wow! I love reading & trying new recipes. This one sounded interesting cuz sweet potatoes are a fav of mine, but I usually mash or bake them with butter. I decided to take the advice of one reviewer & cook the bacon separately & set it aside. Another said the fat from the bacon would all be used up in the saute stage. I too was a bit worried about it being too greasy – but it was just fine. The big difference was using sweet potatoes over ruby red yams. They are more dense & hold their shape better. I used one apple, but think now I could have used the 2. Anne’s note said to saute the sweet potatoes until they were starting to become crisp… as opposed to being really crisp. I did exactly as Anne suggested – they were beginning to get crisp. Since sweet potatoes hold up well, they did not turn mushy. Fantastic dish. I will be making this for TG to wow the fam with something tasty & new. I’m wondering if adding a few dried cranberries to the dish might be a good addition.
