Hasselback Apples

Ingredients

  1. 3 large Pink Lady or Fuji apples, peeled, halved and cored
  2. 4 tablespoons unsalted butter
  3. 5 tablespoons light brown sugar
  4. 3 tablespoons rolled oats
  5. 2 tablespoons all-purpose flour
  6. 1/2 teaspoon ground cinnamon
  7. 1/4 teaspoon kosher salt
  8. 1 pint Madagascar bourbon vanilla ice cream

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Place an apple half cut-side down on a cutting board and cut thin vertical slices into it, being careful not to slice all the way through. Repeat the process with the remaining apple halves. Transfer the apples to a 9-by-13-inch baking dish.
  3. Melt 2 tablespoons of the butter in a small saucepot. Whisk in 2 tablespoons of the brown sugar until fully incorporated. Pour the butter and sugar mixture over the apples. Bake until the apples have softened, 18 to 20 minutes.
  4. Meanwhile, make the streusel topping. In a small bowl, add the oats, flour, cinnamon, salt, remaining 2 tablespoons butter and remaining 3 tablespoons brown sugar. Using a fork or your hands, work the mixture together until it forms a large crumble.
  5. Top each baked apple with the streusel topping, making sure to get some in between the apple slices. Return the dish to the oven and bake until the topping is golden brown, another 10 to 15 minutes. Serve the apples with a scoop of the ice cream.

Made this last night for my husband who was craving dessert. Only had 1 Pink Lady Apple which was great since I was trying a new recipe. Thought about changing out the oats for chopped pecans but wanted to try the original recipe first. Did not have any ice cream on hand. My husband ate both pieces, and thought it was perfect just the way it was made. Keeper recipe; even thinking about bringing this to a holiday function for a dessert choice.

Loved this dessert. It was so quick and easy especially since there was no crust to bother with. I added chopped salted roasted pecans on top of the streusel and it gave it a little extra crunch and saltiness to counter the sweetness. I will definitely make this again and again!  Thank you Jeff!

Easy and quick for a warm weekday dessert! I used some apples I had on hand that were getting soft. I sliced the apples all the way through and just held the slices together when placing in dish. This makes it easier to get the sauce and topping between the slices. This one is a keeper!
