Apple Cider and Sauteed Apple Basmati Rice

Ingredients

  1. 1 tablespoon olive oil
  2. 1/2 large sweet onion, finely diced
  3. 2 Fuji or Gala apples, diced
  4. 1 1/2 cups basmati rice
  5. 2 tablespoons fresh thyme leaves
  6. 2 1/2 cups chicken stock
  7. 1/2 cup apple juice
  8. 2 tablespoons unsalted butter
  9. 1 tablespoon apple cider vinegar
  10. Kosher salt

Instructions

  1. Heat a Dutch oven over low heat and add the oil. Add the onions and sweat until translucent, 8 to 10 minutes. Increase the heat to medium, add the apples, tossing well, and cook until they start to brown. Add the rice and thyme. Cook for 1 to 2 minutes, then add the chicken stock, apple juice, butter, vinegar and some salt and bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender, about 20 minutes.
  2. Fluff with a fork and adjust the salt as needed.

I made this last night. It was so easy and so good. I should have cut the recipe in half because it is a lot for just my husband and I. Tons of leftovers. I would make this again and again. Yum yum

Great recipe! Subtle flavors that pair well with a spicy pork dish. It makes way more than 4 servings- we had 6 for dinner and still had leftovers. I put rosemary in mine as the pork that I was making also had rosemary.

I thought it was good, but a bit bland. It is good with the very rich pork tenderloin with bacon-onion jam. It helps to offset the richness of the jam. I’m thinking more apples might be in order (although mine were kind of small).

Oh my gosh!! Make this! Absolutely delicious. I am not a fan of ride and I can’t stop myself from eating this. I didn’t add both apples because I just didn’t want that many and one was perfect for me. This was great!
