Apple Brown Butter Blondies

Ingredients

  1. Nonstick cooking spray, for the baking pan
  2. 1 large tart baking apple, such as Granny Smith, peeled and diced, about 1 1/4 cups
  3. 14 tablespoons unsalted butter
  4. 3/4 teaspoon ground cinnamon
  5. 1/4 teaspoon ground clove
  6. 3/4 teaspoon fine salt
  7. 1/2 teaspoon baking powder
  8. 1 1/2 cups light brown sugar
  9. 1 tablespoon vanilla extract
  10. 1 large egg plus 1 egg yolk
  11. 1 2/3 cups all-purpose flour
  12. 1 cup chopped toasted pecans

Instructions

  1. Preheat your oven to 350 degrees F. Spray a 9-inch square baking pan with pan spray, line with parchment and spray the parchment. Set aside.
  2. Place the diced apples in a single layer on a microwave-safe plate and cover with another plate. Microwave for 2 minutes, until the apples have softened and given off some liquid. Transfer the apples to a paper towel-lined tray and set aside.
  3. In a medium saucepan over medium-high heat, brown the butter until it is a deep golden color, 5 to 7 minutes. Immediately pour the hot butter into a medium heat-proof mixing bowl. Add the cinnamon, clove, salt, baking powder and brown sugar. Whisk to combine. Whisk in the vanilla, whole egg and egg yolk until smooth. Add the all-purpose flour and stir with a rubber spatula until nearly combined. Add the reserved apple pieces and the nuts to the batter, saving about 2 tablespoons of each for topping the blondies. Stir the batter until the nuts and apples are evenly combined and then pour the batter into your prepared pan. Press the reserved pecans and apple pieces evenly into the top of the batter.
  4. Bake the blondies until golden and a toothpick insert near the center comes out with a few moist crumbs, 33 to 35 minutes. Allow to cool in the pan before cutting with a serrated knife into 16 bars.

Dan, These are DELICIOUS!!! I had to use a Fuji apple because that’s  all I had, but that is the only change I made. I loved the clove in them!

These were awesome!!! Very moist and chewy.  Next time I will cut my apples into smaller pieces so they are more incorporated into the bar.  I’ll also leave out the clove, just because I don’t care for the taste, but it didn’t ruin it for me. Definitely recommend these!!

This turned out delicious. I only had Fuji apples, but it turned out wonderful with them. It was really simple to make as well. Sometimes I am not in the mood to deal with more involved baking recipes. This was an easy dessert to make. I will definitely make it again!

These are incredible and have made me fall in love with all things brown butter.  What an amazing texture and flavor these have.  I chopped my apple pretty tiny based on some reviews and these came out perfect. My husband loves these and says this is one of the best desserts I’ve ever made.  And I have made countless desserts over the years.  This is a keeper!  Oh p.s., I made them with Bob’s Red Mill 1:1 Gluten Free flour.

So delicious, rich and decadent. I would consider the apple to be optional, I think they would be just as good without it and I will try this next time.  I had to bake mine about a little more than 35 minutes. These will seem raw if you eat them hot (ask me how I know!) but as they cool they are fine. I think the hot apple gives it a sense of being raw. Anyway, definately make these!
