Gooey Caramel Apple Hand Pies

Ingredients

  1. 1 cup granulated sugar
  2. 1/2 cup heavy cream
  3. 1 tablespoon salted butter
  4. Two 9-inch unbaked, unrolled pie crusts
  5. 1 to 2 Granny Smith apples, peeled, cored, and diced into 1/4-inch cubes (about 1 cup)
  6. Couple pinches ground cinnamon
  7. 1 egg, beaten
  8. 1/4 cup demerara sugar

Instructions

  1. Pour the sugar and 1/2 cup of water into a small saucepot, trying to keep the sugar in the middle of the pot to avoid crystallization on the sides. Bring to a boil and cook until the syrup is thick and pecan brown, 15 to 20 minutes.
  2. Add the heavy cream, be careful because it will bubble up. Stir in the butter and let cool completely, about 30 minutes.
  3. Preheat the oven to 350 degrees F.
  4. Punch out eight 4 1/2-inch circles from the pie dough. Toss the apples with 1/4 cup of the cooled caramel and the cinnamon. Brush the edges of the dough circles with beaten egg. Mound about 1 heaping tablespoon of the apple filling in the center of each circle. Fold the dough in half and crimp the edges with a fork.
  5. Brush the tops with beaten egg and sprinkle with demerara sugar. Cut 2 small slits on top of each pie and bake on silicone-lined sheet pan until golden, 20 to 25 minutes. Drizzle the hand pies with leftover caramel sauce and serve.

I love baking, but am new to it. I love apple pie and wanted something I could bring to a party. This is just the thing!

My warning: when making the caramel, be careful because it goes VERY quickly from “pecan brown” to downright burnt.

With that mastered, this recipe is absolutely amazing!

I left off the demerara sugar from the top. The pies were just delicious perfection, and everyone LOVED them. When I run across the demerara sugar, I may buy some to try on these pies and other baked sweets. In the meanwhile, it’s perfect even without the spinkling of sugar on the crust!

The Demarara sugar is a bit pricey, but easy to find at Whole Foods. Though I agree with the other reviewer Turbinado sugar would have worked fine too. The Caramel sauce was super easy to make and was barely any work – you don’t stir it until the very end to add the butter, you just need to watch it so it doesn’t burn. I had extra apples, but it wasn’t a problem I just ate the extra raw.
