Yield: 30 fritters

Ingredients

  1. Vegetable oil, for deep-frying
  2. 2 cups all-purpose flour
  3. 1/2 cup plus 3 tablespoons granulated sugar
  4. 2 1/4 teaspoons baking powder
  5. 2 teaspoons ground cinnamon
  6. 1 1/4 teaspoons salt
  7. 2 large eggs
  8. 3/4 cup whole milk
  9. 2 tablespoons melted butter
  10. 2 teaspoons vanilla extract
  11. 2 Granny Smith apples, cored and cut into small dice
  12. Powdered sugar, for dusting, optional
  13. Serving suggestions: breakfast sausage and bacon

Instructions

  1. Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
  2. In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
  3. Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

My family loved them

I love this recipe, I made it with my grandkids and they both said it was fun to make and it was so delicious, we also put some powered sugar and some honey. Thanks Ree for this recipe and for the memories❤️

I plan to make these, however, in an Instagram video pancake mix was used, not flour. How would that affect this recipe, measurement wise and the added baking powder, etc?

I love the simplicity of this recipe and I make them in an air fryer. I love not having to deal with the oil in a deep fryer or a frying pan.

I modified the recipe for dietary reasons by cutting the sugar in half and not putting a glaze or powdered sugar on them. I also have used a variety of kinds of apples.

These are wonderful beside coffee or tea or as a special kind of biscuit with a meal.

Ended up making smaller donut spoons into the oil so the batter cooked through, but the dough puffs up and the warm, fresh apple pieces on the inside are wonderful.

Very good. Easy too. I dipped them in glaze like in the store. I have a large deep fryer so I was able to make them a lot bigger and they cooked just fine.

I made these fritters about one year ago and followed the original written recipe. We loved them. A few days ago I read some of the reviews and noted one of the reviews mentioned the video was different from the recipe. I followed the video and used 3 1/2 cups flour instead of two. Good, but not as good as the original written recipe.

Been making this Apple Fritter recipe for years.  Perfect just the way it’s shared. On storing for myself if any left, I leave on counter they stay more crisp then if stored in a ziplock more soft.  This is a quick goto very easy recipe to make.  Thanks Ree!!
