Nutty Phyllo Ghosts

Ingredients

  1. 1 Granny Smith apple, peeled, cored, and roughly chopped
  2. 1/3 cup peanuts or other nuts, roughly chopped
  3. 1/3 cup plus 2 tablespoons semisweet chocolate chips
  4. 12 caramel cube candies, quartered
  5. 1 package thawed phyllo dough (about 1 pound) or 12 sheets
  6. 8 tablespoons unsalted butter, melted (1 stick)
  7. Confectioners’ sugar for dusting

Instructions

  1. Scrunch up pieces of aluminum foil to make twelve 1/2-inch by about 1-inch cone-like molds for forming the ghosts. Set aside. Line a baking sheet with parchment paper.
  2. Mix the apple, nuts, 1/3 cup of the chocolate chips, and caramels together in a bowl.
  3. Preheat the oven to 400 degrees F.
  4. Remove phyllo from the package, unroll, and cover with a damp towel. (Take care to keep the phyllo covered while you form the ghosts.)
  5. Lay 1 sheet of phyllo on a clean work surface, brush lightly with the butter. Fold the sheet in half, brush the surface again with butter. Fold phyllo 1 more time to make a square. Place a heaping tablespoon of the apple filling in the center of the square. Gather the corners of the phyllo up around the filling, then pinch the dough around the filling. (It should look like a Halloween sheet ghost, with a small head and a drape of phyllo.) Place the foil cones inside the open part of the phyllo. Lay the ghost flat on the prepared pan, reshaping the phyllo if needed. Repeat with the remaining filling and phyllo.
  6. Bake until the phyllo is light brown and crisp, about 15 minutes. Cool.
  7. When ready to serve, melt the remaining 2 tablespoons chocolate chips in a small bowl in the microwave. Generously sift confectioners’ sugar over the ghosts. To make the ghost eyes, lightly touch 2 spots on the head of each ghost with a moist finger to remove some of the sugar. Then dab or pipe the melted chocolate in the 2 spots to make eyes. Cool, remove the foil molds and serve on a platter.

These taste good. I left out the chocolate. Keep in mind there are different thicknesses to phyllo dough. Some is used for heavier fillings some for lighter fillings. The thicker ones may be better for this to hold the shape. Using CLARIFIED, unsalted butter will also help with keeping the shape. Unclarified butter is heavy and makes pastry soggy.

these tasted good, but it was almost impossible to make the ghosts stand up. also, everything exploded out of them when they cooked. basically i just had a white blob that tasted good.

The ghosts were very difficult for me, after a couple tries I switched to mummys! Much more forgiving, and they looked great. I also made half of them without choc chips and used cut up mini marshmallows instead. Sprinkled them with granulated sugar before baking — then a light dusting with baster brush of powder sugar afterwards. They looked great, and the kids and adults all loved them!

These were very tedious to make, the phyllo was tearing, and I only was able to get 2 ghosts to stand! They tasted good though, and I did omit the chocolate chips. I didn’t think it went well.

The receipe tastes excellent. I found the ghosts tricky to make because the phyllo dough tends to puff in the oven. Helpful tips:
1. only fold the dough over once before adding filling
2. use LOTS of butter to cover the dough, I ended up using 3 sticks
3. don’t expect it to look like the picture!

This recipe was not easy at all it was very hard to keep the dough from becoming mush and tearing when I tried to form it around the filling, They did taste good but did not look like the ghosts in pictured.

Really yummy snack, but quite a bit of work. I didn’t have too many troubles, I did get tired of working on them though.
