Ingredients
- 3 tablespoons butter
- 4 medium-size, Granny Smith apples (about 1 1/4 pounds), peeled, cored, and cut into 1/2-inch slices
- 3/4 cup sugar
- 2 tablespoons water
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 pint vanilla ice cream
- 1/4 cup salted cocktail peanuts, roughly chopped
Instructions
- In a large saute pan over medium heat, melt 2 tablespoons butter. Add apples and saute, turning occasionally for even cooking, until slightly golden and softened but still holding its shape, about 10 to 12 minutes.
- Meanwhile, in a small saucepan over medium heat, add sugar and water. Stir occasionally and watch closely until color just starts to change to golden-amber, about 6 to 8 minutes. Remove pan from heat and carefully add cream (mixture will bubble and release steam). Gently stir until bubbles subside slightly, and put back over very low heat. Stir in remaining tablespoon butter, vanilla, and salt, and remove from heat. Set aside to thicken slightly.
- Disperse apples into 4 serving bowls and spoon warm caramel sauce over to cover. Top each with a scoop of ice cream, spoon more caramel over the top, and garnish with peanuts.

Caramel sauce didn’t work well
I really loved this recipe! It was delicious! The only problem I had was I didn’t cook the sugar and water long enough for the caramel. The caramel turned out a white-ish color but still tasted exactly the same! But this was definitely a keeper!!! Yum!
Unlike our colleagues from New York (ironic all the negative comments are from New York), I actually liked this recipe very much and will use it over and over again. Perhaps not all of us have reached the level of culinary expertise as our friends in New York, but I will say that I am extremely grateful that FN continues to post simple recipes for us beginners.

Really, people, who cares how many chefs have done a similiar recipe? The chefs of Food Network do it all the time! I’ve found MANY recipes that The Chefs on this site have done that are on the back of boxes in the gocery store!
I like easy and quick. Frankly, Rachael Ray’s recipes lose that element frequently. Give this Chef a break. Dang!
Rachael does have some similar recipes, but I actually like Mary’s better in this instance. I loved the combination of the sweet caramel and apples and the salty crunch of the peanuts. So good!
