Apple Peanut Butter Delights

Ingredients

  1. 6 whole-wheat English muffins
  2. 1 cup peanut butter
  3. 2 medium Granny Smith apples, cored and thinly sliced
  4. 1/2 cup sugar
  5. 1 tablespoon ground cinnamon
  6. 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Halve the muffins and spread a heaping tablespoon of peanut butter on each half. Layer the apple slices on the peanut butter. Mix the sugar, cinnamon and nutmeg together in a small bowl and sprinkle about 2 teaspoons on top of each muffin half.
  3. Put the muffin halves on a baking sheet and bake for 10 minutes. Set the oven to low broil and cook until bubbly and caramelized, about 3 minutes.

Have made these several times since the show aired. Hubby really likes it too, which is good to get some fiber and protein in him. I also drizzle with a bit of honey over the top. Yummy!
