This recipe originated with my mom’s mother (my Nana Dot) and has been handed down through the generations, straight from Ireland. It’s great if you enjoy soda bread!

Ingredients
- 1 (8 ounce) slice feta cheese, crumbled
- ¼ cup whole-milk Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh basil
- ½ teaspoon freshly cracked black pepper
Instructions
- Combine feta cheese, yogurt, oil, lemon juice, lemon zest, and garlic in a food processor and mix until well blended and smooth. Add mint, basil, and pepper and pulse to combine.

Husband and I are divided on this. He loved (ate on Triscuts) and I tried both with sliced carrots (okay), Triscuts (again, okay), and paired with my Gyros made tonight (again! Just okay??). I followed the recipe exactly – even fresh mint and basil. Made yesterday so the flavors would meld. Snacked on prior to and with our Gyro dinner tonight. It’s confusing to me (why I don’t love) because i love all the ingredients in this!? Still glad we tried. Thanks Nicolemcmom!
