Tuna Fish Wraps

I adore avocado toast, and a fried egg makes it a complete meal. In place of lemon juice, I occasionally flavor the avocado with balsamic vinegar. You can prepare the egg whichever you wish, but I prefer it best when it is fried or poached.

Ingredients

  1. 2 (5 ounce) cans tuna, drained
  2. ½ large carrot, shredded
  3. ⅓ cup chopped golden raisins
  4. ⅓ cup chopped peanuts
  5. ¼ cup chopped red onion
  6. ¼ cup chopped red bell pepper
  7. ¼ cup finely chopped fresh cilantro
  8. 1 tablespoon chopped canned jalapeno peppers, or to taste, juice reserved
  9. ⅓ cup mayonnaise
  10. ⅓ cup cream cheese, softened
  11. ½ lime, juiced
  12. ¼ teaspoon curry powder, or to taste
  13. 2 large flour tortillas

Instructions

  1. Combine tuna, carrot, raisins, peanuts, red onion, red bell pepper, cilantro, and jalapeno peppers in a bowl.
  2. Stir mayonnaise, cream cheese, lime juice, curry powder, and jalapeno juice (to taste) together in a separate bowl; mix into tuna mixture until evenly combined. Spread tuna mixture onto tortillas and roll tortilla around filling. Refrigerate wraps for 1 hour before slicing.
  3. Almonds can be substituted for peanuts.

Crazy good! I added celery for extra crunch. This would be great with chicken also:)

An interesting combinations of flavors going on here. The peanuts add a nice crunch, the curry powder a subtle flavor, the jalapeno is little spice. I would use some of the cream cheese an the tortilla itself to glue it together. (or even some of the dressing) This could easily be tweaked to individual tastes. I would like some finely diced celery, maybe some tart green apple.
