Mango/pineapple-flavored meatballs from the barbecue.

Ingredients

  1. cooking spray
  2. 1 cup mango chunks
  3. 2 pounds ground beef
  4. ½ cup bread crumbs
  5. 3 cloves garlic, minced
  6. 1 (1 ounce) package dry golden onion soup mix (such as Lipton®)
  7. 1 tablespoon adobo seasoning
  8. 1 teaspoon ground thyme
  9. 1 teaspoon ground ginger
  10. 1 teaspoon sea salt
  11. ½ teaspoon ground black pepper
  12. 2 eggs
  13. 1 (18 ounce) bottle barbeque sauce
  14. 1 cup mango chunks
  15. 1 cup canned pineapple chunks
  16. ½ cup white sugar
  17. 1 tablespoon soy sauce
  18. 1 tablespoon yellow mustard
  19. 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a rimmed baking sheet with cooking spray.
  2. Puree mango chunks using an electric blender or food processor.
  3. Place ground beef in a large mixing bowl; add bread crumbs, garlic, soup mix, adobo, thyme, ginger, salt, and pepper. Mix thoroughly. Add eggs, followed by pureed mango; mix again. Shape into 1 1/2-inch meatballs and place on the prepared baking sheet.
  4. Bake in the preheated oven until browned and no longer pink in the centers, about 45 minutes.
  5. Meanwhile, mix barbeque sauce, mango, pineapple, sugar, soy sauce, mustard, and cinnamon for sauce together in a medium mixing bowl.
  6. Remove meatballs from the oven and drain excess oil/grease. Increase oven temperature to 400 degrees F (200 degrees C). Pour sauce over meatballs and return to the oven.
  7. Bake in the preheated oven for 20 minutes.
  8. You can use fresh or frozen and thawed mango chunks, and either fresh or canned pineapple chunks.

Very good. Family liked it-we are BBq lovers- could really taste Mango in sauce-the pineapple was perfect. I baked meatballs on cookie sheet then transferred to baking dish and poured over sauce. Super rich but delish.

Wow. The meatballs are filled With delicious flavor The cooking aroma was enticing. The pineapple mango bbq sauce has a little “zing” to it. Just Enough to enhance the taste experience.
