Sweet and Sticky Wings

This is the particular curry recipe I was given by my grandmother. In my lifetime, I’ve had a lot of curry in every imaginable form because I was raised in the British Virgin Islands in the Caribbean. This particular dish consists of chicken and potatoes in a somewhat spicy yellow curry sauce, all of which are served over jasmine rice. You can omit the rice and use it as a filling inside a roti skin.

Ingredients

  1. 1 tablespoon olive oil
  2. ¼ cup minced garlic
  3. ½ cup hot pepper sauce (such as Frank’s RedHot®)
  4. ½ cup white sugar
  5. vegetable oil for frying
  6. 10 chicken wings
  7. 1 ½ tablespoons slivered green onions

Instructions

  1. Chill a metal bowl in the freezer.
  2. Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 2 to 3 minutes. Add hot sauce and sugar to garlic; cook and stir until mixture is reduced and bubbling, about 5 minutes.
  3. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Cook wings in the hot oil until no longer pink in the center, about 10 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  4. Remove wings from hot oil using a slotted spoon and transfer to the chilled bowl. Add garlic-hot sauce to wings and toss to coat. Transfer coated wings to a serving platter and garnish with green onion.
  5. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount will vary depending on cooking time and temperature, ingredient density, and the specific type of oil used.

We loved this. The wings were delicious. They were sweet with a little spice. We made them exactly as the recipe said. It may be a little heavy on the garlic, but we didn’t mind. We fried them extra crispy and used Frank’s Redhot. I would almost go as fair as saying they were as good as any take out wings.

Great flavor, and not real spicy. I added a bit of cornstarch to thicken this, and I ended up adding some ginger… but it would have been fine as written.

So good.. Tasted like a sweet Asian sauce. I made a double recipe of the sauce and saved the extra for another night. wasn’t spicy at all. Granted… I used Frank’s Red Hot WING sauce instead of just hot sauce. Thanks for the recipe!
