This tart side dish for pork or fowl has fruity aromas and spicily fiery peppers.

Ingredients

  1. 2 cups chopped cranberries
  2. 1 small apple – peeled, cored, and finely chopped
  3. 1 orange – peeled, sectioned, seeded, and finely chopped
  4. ⅓ cup white sugar
  5. 1 shallot, finely chopped
  6. 1 jalapeno pepper, seeded and finely chopped, or more to taste
  7. 1 green onion, thinly sliced
  8. 1 tablespoon freshly squeezed lime juice
  9. 1 tablespoon white wine vinegar

Instructions

  1. Mix cranberries, apple, orange, sugar, shallot, jalapeno pepper, green onion, lime juice, and vinegar together in a bowl. Cover bowl with plastic wrap and refrigerate for flavors to blend, 4 to 24 hours.

I doubled all the ingredients for a party of 8. This salsa was the perfect mixture of spicy and sweet. I recommend making it for a Thanksgiving app.

Had to use leftover cranberries from the holidays, so I made a lot of substitutions – didn’t want to make a special trip to store. It turned out fabulous – family loved it! Used 1Tbsp red pepper flakes for jalapeño; used diced 1/2 small red onion for green onions; used cider vinegar for red wine vinegar; reduced sugar to 1/4 cup; added 1Tbsp avocado oil and cilantro as garnish.Turned out fresh, just the right zip, flavorful. Used on grilled chicken breast and tasted gourmet! Family wants it more often!
