Spicy Crab Spring Rolls

This instant oatmeal tastes strikingly similar to the maple and brown sugar types you can get in little sachets. Make your own to save cash! Add boiling water until desired consistency is obtained for each batch of oatmeal by combining 2/3 cup quick-cooking oats with 1 to 2 tablespoons of the mix.

Ingredients

  1. ¾ cup imitation crabmeat
  2. 1 ½ tablespoons mayonnaise
  3. 1 teaspoon sriracha sauce, or to taste
  4. 4 rice paper wrappers
  5. ⅓ English cucumber, cut into matchsticks
  6. 1 carrot, cut into matchsticks
  7. ½ ripe avocado, sliced lengthwise into 8 pieces
  8. 1 green onion, cut into matchsticks

Instructions

  1. Shred crabmeat using 2 forks or in a food processor.
  2. Mix crabmeat, mayonnaise, and sriracha sauce together in a small bowl.
  3. Fill a shallow bowl with hot water to a depth of 2 inches. Dip 1 rice paper wrapper in the water for a few seconds to soften; set on a wooden cutting board or a clean, moist dish towel. Layer 1/4 of the cucumber, carrot, avocado, crabmeat mixture, and green onion in the bottom third of the rice paper.
  4. Pull bottom of the rice paper over the filling, using your fingers to prevent it from spilling out the sides. Fold opposing edges of the rice paper to overlap the filling; roll up tightly towards the top. Place roll seam-side down on a plate. Repeat with remaining rice papers and cucumber, carrot, avocado, crabmeat mixture, and green onion.

This recipe was great, and surprisingly easy! The only recommendation I would make is to either chop the green onion or leave it out. When cut into matchsticks, it makes it imposible to cleanly bite off pieces of the spring rolls and kinda feels like you’re eating grass.

We thought these were just okay… definitely fresh and tasty but you need to enjoy rice paper for sure. We dipped in chili garlic sauce. The avocado was the best part.

What a fresh, pretty and delicious dish! It was simple to make and healthy too. I used some cut up shrimp instead of crab which was awesome. The rice paper wrappers are surprisingly tough and easy to work with. I learned to remake my rolls as tight as possible so they don’t crumble apart as you eat them. I served mine with the “Best Peanut Sauce” recipe from this site and they were a hit with my family. They’re a perfect hot summertime, light evening meal.

These were good! I ended up doubling the Sriracha after tasting the crab mixture but that is the only change I made. You can actually get 6 rolls out of this recipe. Next time I will replace some of the carrot with bean sprouts for added texture. Thanks for sharing the recipe!
