Spicy Bacon-Wrapped Scallops

I gave the bacon-wrapped scallops a kick since I prefer my food a little hot. On our date nights, I frequently make them for my husband and serve them with steak.

Ingredients

  1. 10 slices bacon
  2. 10 sea scallops
  3. 1 teaspoon Cajun seasoning
  4. 1 tablespoon olive oil
  5. 1 lemon, cut into wedges

Instructions

  1. Arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until lightly browned but still pliable, about 5 minutes. Drain the bacon slices on paper towels.
  2. Wrap each slice of bacon around one sea scallop and secure with a toothpick. Season with Cajun seasoning.
  3. Heat olive oil in a clean skillet over medium-high heat; sear scallops until golden and bacon is crisp, 3 to 4 minutes on each side. Squeeze lemon over scallops. Serve immediately.

If you’re using bay scallops cook the bacon strips at 5minutes per side, place on paper towel & then cut them in half. Plenty long enough for the smaller yet more succulent bay scallops. A winning recipe!

This was very good — I cut down the amount of the bacon only using half slices on the scallops. It was a little messy but VERY good!

Wife & I LOVED these! Scallops and Bacon … what’s not to love! Only changes were to fry them in bacon grease and seasoned with Zatarain’s Creole Seasoning that I had on hand. Used el cheapo streaky bacon for it’s thin cut to ensure complete cooking after two minutes in microwave. Served with Jasmine rice and garden salad. Soooo GOOD.

these were super tasty and pretty simple to make.. i used Tony Chachere’s Creole Seasoning for the cajun seasoning.. didn’t really measure anything.. just eyeballed.. i fried the bacon wrapped scallops in the bacon grease so no extra oil was needed.. ty for the recipe

Hubs loved – anything with bacon- right? Didn’t have cajun seasoning – used Montreal Steak Seasoning. Used thick bacon from the butcher block. Skewered them and grilled them. Pefection! Thanks for a great recipe.

The Baking Nana instructions of not moving the scallops was perfect. These were a huge hit at my family party this weekend. Very tasty and very easy. We used our 1000W microwave to pre-cook the bacon. We had 4 slices on a plate for 2:30 on high. Then when searing in the oil, they became perfectly crispy. We made about 20 scallops at a time. Will do this one again.
