Slow Cooker Lentil Nacho Dip

A quick and delicious nacho topping or dip that will please everyone! Simply combine all the ingredients in a small slow cooker, and heat for a few hours until ready to serve. Roll up in soft tortillas or serve over tortilla chips, rice, or pasta.

Ingredients

  1. ¾ pound ground beef
  2. 1 cup green lentils, rinsed
  3. 1 (16 ounce) can kidney beans, drained and rinsed
  4. ½ cup salsa
  5. 1 (16 ounce) package Cheddar cheese, cubed

Instructions

  1. Add beef, lentils, kidney beans, salsa, and Cheddar cheese to a small slow cooker, in that order. Cook on Low for 4 to 6 hours or on High for 2 to 4 hours.
  2. You can remove the meat if you prefer a vegetarian option.
  3. Use any type of salsa that you prefer.
