Simple Roasted Edamame

Ingredients

  1. 1 (12 ounce) package frozen edamame (soybeans) in their pods
  2. 2 tablespoons extra-virgin olive oil
  3. 2 cloves garlic, minced
  4. 1 teaspoon sea salt
  5. ½ teaspoon ground black pepper

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Toss edamame, olive oil, garlic, sea salt, and black pepper together in a large bowl until well-coated. Spread in a single layer on a baking sheet.
  3. Roast in the preheated oven, stirring halfway through, until edamame shells start to brown, about 20 minutes. Serve whole, popping beans out of the shell to eat.

I love this recipe. It’s just my husband & I at home so I made the recipe for two. Also, I used garlic powder instead of cloves and sprinkled Parmesan on top of them. Excellent!

Healthy easy snack. I like it hot so I added a little crushed red peeper flakes. I substituted Sesame oil for the olive oil to give it that Asian flair that we love and used garlic powder in place of the cloves. I loved it.

Only change was to sprinkle on some grated Parmesan last few minutes. Was quite good and received compliments from my guests.

It was great. I used garlic powder and onion powder along with the salt and pepper. Also added a little more olive oil and a couple of drops of sesame flavored chili oil. We couldn’t stop eating them. Mak sure that the edamame are dry when you start if you want them to be crispy.
