Sesame Chicken Wraps

When I was younger, my mother used to make this, and while I didn’t particularly enjoy it, with time I developed a liking for it. I prepare it once a week for my husband, who adores it. Making it is simple.

Ingredients

  1. 1 tablespoon cooking oil
  2. ¾ pound skinless, boneless chicken breast, cut into strips
  3. 2 tablespoons sesame seeds
  4. ½ teaspoon garlic salt
  5. ¼ teaspoon ground black pepper
  6. 3 cups chopped broccoli
  7. 1 medium red onion, thinly sliced
  8. 1 teaspoon grated fresh ginger
  9. ¼ cup white sugar
  10. ¼ cup creamy peanut butter
  11. 3 tablespoons soy sauce
  12. 3 tablespoons water
  13. 2 teaspoons minced garlic
  14. 1 ½ cups warm cooked rice
  15. 6 (10 inch) flour tortillas, warmed

Instructions

  1. Heat oil in a large skillet over medium-high heat. Toss in chicken, sesame seeds, garlic salt, and pepper; cook and stir in hot oil until no longer pink, 3 to 4 minutes. Add broccoli, onion, and ginger. Cook until vegetables are tender and chicken is no longer pink in the center and the juices run clear, about 5 minutes.
  2. Meanwhile, combine sugar, peanut butter, soy sauce, water, and garlic in a small saucepan over medium-low heat. Cook sauce, stirring frequently, until sugar is dissolved, about 3 minutes.
  3. Assemble the wraps using the tortillas, chicken-broccoli mixture, cooked rice, and peanut sauce.

I thought these were really good wraps, and they made for a really fast and easy dinner. I omitted the rice as I felt the wrap itself was enough carbs for me. I did alter the peanut sauce slightly; I found it a bit too sweet and not peanut butter-y enough for my tastes when made as written, so I added more peanut butter and a bit of Sambal Oelek for heat as well. I would reduce the sugar next time. Other than that, followed the recipe pretty closely. Thank you for the recipe!
