Because the pineapple offers a texture that is comparable to shredded chicken and the savory ingredients cover up the pineapple flavor, I’ve had people ask me if it is chicken salad. It’s the ideal addition to your favorite crackers for a quick bite before a meal or a filling afternoon snack. You may serve it on celery sticks or those tiny tri-colored mini bell peppers, split in half, if you’d want to sneak in some vegetables.

Ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1 (8 ounce) can canned crushed pineapple, drained
- 1 cup chopped pecans
- ½ cup chopped green bell pepper
- 2 tablespoons chopped green onion
- 1 teaspoon salt, or to taste
Instructions
- Combine cream cheese, crushed pineapple, pecans. bell pepper, most of the green onion, and salt in a bowl, reserving some of the green onion tops for garnish.
- Serve immediately if desired with reserved green onions sprinkled over, or cover with plastic wrap and refrigerate until ready to serve.
- Leftovers keep in the refrigerator for up to 4 days.

I loved this and used regular onions since I didn’t have green (which I will try later). Plus used red bell pepper. I’m sure the green would give it a different flavor but enjoyed the less spice of the red pepper.
