Ridiculously Easy Queso Fresco “Dip”

I recently bought a massive chunk of queso fresco, or white cheese from Mexico, at my neighborhood Costco. Unsure of what to do with it, I came up with this altered dip that goes great with any dinner that has a Mexican theme. It looks far more elegant than traditional chile con queso and is insanely simple to make. Enjoy your dish with tortilla chips! As required, reheat.

Ingredients

  1. 1 (12 ounce) package queso fresco
  2. 1 (16 ounce) jar salsa
  3. 1 bunch fresh cilantro, chopped
  4. 1 jalapeno pepper, seeded and diced
  5. 2 dashes hot pepper sauce (such as Frank’s RedHot®)

Instructions

  1. Slice queso fresco in half horizontally, creating 2 rounds. Transfer to a shallow microwave-safe baking dish.
  2. Spread salsa evenly over queso fresco and pour any residual juices around the dish for queso fresco to marinate in. Top with cilantro, jalapeño, and hot sauce. Cover with plastic wrap and let marinate for at least 2 hours, preferably longer.
  3. Heat queso fresco in the microwave until slightly softened, about 3 minutes.

This really didn’t work for me in terms of the method. The salsa became nuclear hot by the time the cheese was softened. The combination is of course fine (cheese and salsa is always a winner!) but I think it needs to be baked for the textures to be right.

I made this for my coworkers and they loved it! The cheese melted just enough to make it kind of springy. I loved the texture and flavor with the salsa. Such an easy and flavorful recipe for a party!

Great flavors and the added jalapenos add a nice kick. Queso fresco takes on a smoother texture when heated.
