This recipe for vanilla cake is simple to prepare and perfect for any occasion. I’ve never made a cake better than this one. It’s not overly bland or overly sweet. Cut the cake in half through the centre to create two layers, then top with frosting of your choice.

Ingredients
- 1 (8 ounce) package cream cheese, cut into chunks
- 3 ounces fresh raspberries, rinsed and patted dry
- 2 tablespoons honey
Instructions
- Place cream cheese in a bowl and microwave at 30% power in 10 second intervals until slightly soft but not warm, approximately 20 to 30 seconds.
- Place raspberries and honey over top and lightly mash raspberries with a fork. Stir mixture until evenly combined.
- I often make this using low-fat cream cheese with great results. You don’t even miss the extra calories and fat.
- For convenience, I buy the cream cheese in a plastic tub, mix all the ingredients, and return to the tub for storage.

I give this 5 for a fast, healthy snack. I made this for my raspberry loving grandkids. I softened cream cheese on the counter to room temperature and mixed the honey and did add extra berries just because they’re so yummy. Served it on graham crackers as snack and it was a hit! Can’t wait to try it for breakfast!
