My family’s preferred cookies are these ones. They are simple to make, distinctive, and attractive. One of the best recipes to prepare for a cookie exchange. Everyone will want a copy of your recipe, so bring one along!

Ingredients

  1. 22 Medjool dates, pitted
  2. ⅔ cup finely chopped almonds, divided
  3. ½ cup shredded unsweetened coconut

  8. 1 pinch salt

Instructions

  3. Use 1/3 cup shaved dark chocolate in place of cocoa powder if desired.
  4. If you want a creamier texture, blend in more pumpkin puree. If you want it drier, add more coconut.

Excellent dessert/ snack ! Best chilled as recommended. Tastes like a small moist brownie! I recently started eating vegan for health reasons. This is a wonderful healthy option. I left out the coconut and still delicious! Even my picky friends loved it! I toasted my almonds, a personal preference . Enjoy!
